The Ultimate Chocolate-Lovers Brownies

FOOD

I for one am a bit of a chocoholic…maybe more than a bit. I’m guessing you guys are too. Who doesn’t love a little injection of chocolate in their lives? I sure dooo! Well these brownies are basically a chocolate-lovers dream… its just the gooeness, the fudginess and  the chocolate oozing out of it. Not gonna lie, I am getting a bit hungry as I am writing this! What makes these brownies unique is that you could add anything to spice it up to your taste and perfection. The best brownies are soft in the centre and have a crust on top. This recipe couldn’t be simpler – all you do is measure the ingredients into a bowl and give it all a good mix! Cuz aint nobody got time. I’m using good old Mary Berry’s recipe, so I am not taking credit for this but i thought i might share it anyway.

SERVINGS: 24 | PREP TIME: 10 MINS | COOK TIME: 40-45 MINS | DIFFICULTY: SUPER EASY

You Will Need:

275g (10oz) butter, softened
375g (13oz) caster sugar
4 large eggs
75g (3oz) cocoa powder
100g (4oz) self-raising flour
100g (4oz) white chocolate chips ( Here is the bit you can add anything you like eg. raisins, orange chocolate, nuts…)

Lets Get Started…

  1. Preheat the oven to 180°C/Fan 160°C/gas 4. Cut a rectangle of non-stick baking parchment to fit the base and sides of a 30cm x 23cm x 4cm traybake or roasting tin. Grease the tin and then line it with the paper, pushing it neatly into the corners.
  2. Measure all the ingredients into a large bowl and mix with a hand-held electric mixer until evenly blended.
  3. Spoon the mixture into the prepared tin, scraping the sides of the bowl with a plastic spatula to remove all of it. Spread the mixture gently to the corners of the tin and level the surface with the back of the spatula.
  4. Bake for 40–45 minutes, until the brownies have a crusty top and a skewer inserted into the centre comes out clean.Cover loosely with foil for the last 10 minutes if the mixture is browning too much. Allow the brownies to cool in the tin and then cut into 24 squares and dust it with a little bit of icing sugar. Store in an airtight tin. It’s as easy as can be. Enjoy (!)…

Drifting Off In Venice…

I don’t know about you guys but I love going on family holidays! Enjoying the scorching sun, tasting the salty sea water and enjoying every moment. So… last year we went to Venice.  One of the most romantic and evocative places in the world, a priceless treasure.

Honestly, I think this is one of the best places i have visited during my life time. There’s just something about Venice that I love. It most definitely not our last visit. The food, the atmosphere, the people…it’s just pure perfection. I am just so into it.  #GoodVibesvenice32221-1 Venice itself is bursting with traditional shops, gorge traditional Italian restaurants and more gelato that you could ever imagine!  The food in Italy in general is just beautiful, I could literally live off of lasagna and pizza for the rest of my life let alone the bread, dips, and AHHHMAZING deserts. Okay, I’m gonna stop now as I’m actually considering writing a whole post JUST on my fave Italian restaurants, so let me know if you’d wanna see that! As you could probably guess we did go a little overboard when it came to the food but it was worth it. #Venicegoals

1Golden hour is always, and will always be, my favourite time to take photos. It’s that warm, crisp sun light that’s just amazing. Every evening we would head down to check out the view once again, it really is one of those places that you just can’t get enough off.

These photos are just a snippit from the holiday and like I said, maaaybe a more foody holiday post.  We had the most glorious time and have all come back home feeling super refreshed and even more ready for all the exciting things to come! A memory that will forever be held on our shoulders… You think it will all stop here… Nope, Venice here we come (again!)…
